Founded by Ronald and Maria Nutt, the restaurant aims to fill the culinary gap left by the closure of Bayou Rouge last year. With Maria hailing from the Philippines, she emphasizes that Filipino cuisine qualifies as “the original fusion cuisine,” reflecting its rich blend of influences from Asia, Europe, and the Middle East.

As the only Filipino restaurant within a 100-mile radius, Bistro Manila’s founders, Ronald and Maria, believe there is a growing interest in Filipino food. Ronald Nutt remarked, “People like it. It’s a taste people are looking for.” The restaurant aims to bring authentic flavors to Dallas County and intends to grow its menu in response to customer preferences.

To start, the menu features a few select dishes that include Pansit Bihon Guisado, Chicken Pork Adobo, and Lumpiang Shanghai, showcasing the fusion influences within Filipino cuisine. While not overly spicy, the food is intended to be seasoned and flavorful. Ronald emphasizes that, while Bistro Manila does not strictly serve health food, their offerings are healthier alternatives to typical fast food.

Feedback from customers during the soft opening has been overwhelmingly positive, with two attendees, former Tally Ho owners Bob and Donna Kelly, praising the cuisine. Family involvement is strong, as Maria’s daughter and son-in-law, Pinch and Gilbert Golpeo, have joined the business after relocating from California.

During the soft opening weekend, Ronald reported great attendance and outlined Bistro Manila’s operating hours, which are Monday through Friday from 11 a.m. to 1 p.m. for takeout and Friday evenings from 4 p.m. to 7 p.m. for dine-in. Ronald expressed commitment to culinary uniqueness, stating, “We’re going to be different, but we’re going to focus on a taste people will like.”
