Danico, a Parisian bar, has unveiled the fifth edition of its Xplorer series, showcasing a menu inspired by Peru’s rich cultural heritage. This series, launched in 2023, introduces new menus every six months that reflect global regions, with the current focus on Peru, a country deeply influential to Danico owner Nico de Soto since his visit in 2007.

The menu narrative is crafted from Peru’s diverse landscapes, indigenous traditions, and colonial influences, featuring unique ingredients in each cocktail. Collaborating with bar manager Coco Gaudin, de Soto designed 12 innovative cocktails, such as Titicaca, which incorporates Rémy Martin VSOP Cognac, pumpkin seeds, and grilled sweet potato milk, named after the famous Peruvian lake.

Among the new cocktails is Chicha Morada, inspired by the eponymous Peruvian drink, combining Grey Goose Vodka and purple corn. Another creation, Leche de Tigre, includes Citadelle Gin and ceviche distillate, while Tupánanchiskama, meaning “see you soon” in Quechua, features tonka-infused Bacardí 8 rum and roasted coffee distillate. Recently, de Soto also launched his pandan liqueur, Kota, in the United States.

The Danico bar’s Xplorer series continues to celebrate global cultures through its cocktails, with the latest menu representing Peru’s vibrant heritage. The collaboration between Nico de Soto and Coco Gaudin has led to the creation of 12 unique cocktails that highlight traditional Peruvian ingredients and flavors. This innovative approach not only reflects de Soto’s personal journey but also enhances the cocktail experience at Danico.
